Look at the oceans on the Google Maps homepage. Sea level is sea level. So why do they look lumpy and ridged?
There are ridges or mountains in the oceans. Such as the North Atlantic ridge.

By the way, sea level is not sea level. There can be significant differences between the levels of different seas or oceans. That's why the Panama canal has locks, to move ships to a different level of sea.
